The Blue Oyster Mushroom (Pleurotus columbinus), sometimes called Blue Pearl Oyster, is a cold-tolerant variety of oyster mushroom known for its striking steel-blue to gray caps. The blue coloration is most noticeable when the mushrooms are young and grown in cooler temperatures, gradually fading to gray or tan as they mature. Like other oyster mushrooms, it produces fan-shaped caps with white gills and a mild, savory flavor that makes it popular for both culinary use and cultivation.


In nature, Blue Oysters grow on decaying hardwood logs and branches in temperate forests and typically fruit during the cooler months of fall and winter. They are known for their fast colonization and strong productivity, making them a favorite among growers. This species thrives on substrates such as straw or hardwood sawdust and fruits best in cool conditions around 45–65°F with high humidity and good airflow, often producing multiple flushes from a single substrate block.
