Maitake (Grifola frondosa), often called Hen of the Woods, is a prized gourmet mushroom known for its layered, fan-shaped clusters and rich flavor. Native to the cool deciduous forests of Japan and North America, Maitake naturally grows at the base of hardwood trees, particularly oak. It typically fruits in the early fall and is highly valued by both foragers and cultivators for its unique appearance and culinary appeal.


Maitake can also be successfully cultivated using hardwood-based substrates and grain spawn.
